Fiesta Turkey Chili Recipe

March 31, 2009 | Filed Under Dinner Round Up | 2 Comments

My husband loves Chili but I don’t like the calories that come along with the standard recipes for Chili.  So instead of a high calorie Chili recipe, we use this:

  • 2 tbs EVOO
  • 2 cloves garlic, chopped
  • 1 cup onion, diced
  • 2 stalks celery
  • 1 lb ground turkey
  • 1 tsp ground cumin
  • 1 tbs chili powder
  • 2 cups chicken or vegetable broth
  • 1 can diced tomatoes
  • 1.5 cups corn

In large saucepan, heat EVOO, garlic and onion over medium heat.  Add celery and cook an additional 3 minutes or so.  Add ground turkey, chili powder and cumin.  Cook 5 minutes or until turkey is no longer pink.  Add your broth, diced tomatoes and corn.  Cover and let simmer 10 minutes.

As you can see its a really easy recipe.  In addition to being easy, its fast and healthy.

walgreensDeal Seeking Mom just recently posted that Walgreen’s will be cancelling their EasySaver Rebates Program.  This leaves me wondering what’s next?  Will CVS follow suit and cancel their Extra Care Bucks Program?  I sure hope not.

I’m not a big Walgreen’s shopper anyway so the news really doesn’t affect me much, but what about you?  How will this affect you?  Are you surprised at the news?

Kraft DressingI really hope you picked up a Sunday paper.  There is a $1.50/1 Kraft Dressing coupon.  This is going to make some really cheap Kraft Dressing.  Shynea at Penny Pinching Diva says that Kraft Dressing is priced at $1.58 at Wal-Mart this week, so use your coupon and pay $.08 for name brand dressing.  How sweet is that!

Thanks to Shynea for this great deal!

Earthbound FarmFrom the email I received from Earthbound Farm:

Since 1970, Earth Day (April 22nd) has been set aside as a day to honor the Earth, consider the challenges facing the environment, and explore the opportunities we have — as individuals, communities, and nations — to help protect and replenish our precious natural resources.

We’ve rounded up some ideas we can all use into a list we’re calling the Sustain Yourself, Sustain the Planet Pledge.

  • Click on the sun icons to see what a difference your choices can make, and pledge to try one or more of them in your life.
  • Then print out your choices as a reminder of your pledge — if you’re one of the first 10,000 people to take the pledge each week in April, you’ll win a beautiful Earthbound Farm reusable shopping tote!
