It’s Football Time with Frito-Lay and a Giveaway! (Closed)

Football season is upon us and everyone knows that game day just isn’t complete without the ultimate tailgating party! Whether it’s with a group of friends huddled outside the stadium or the family gathered around the TV in the den, tasty food and snacks are essential to a “winning” tailgating experience.

Tailgating for most of us conjures images of greasy pizza and saucy wings. With a little vision and planning, you can score big by offering a menu that’s just as delicious but a bit better for you.

Fewer penalties, better tailgating…

When I think about tailgating parties, I think of high calorie, fat drenched comfort foods but it doesn’t have to be that way. You can substitute some better for you ingredients such as using a lean protein, using fat-free or low-fat ingredients and offering healthier alternatives such as guacamole and nuts can trim hundreds of calories off your meals! We know few people go to tailgate parties for the veggies – it’s definitely a time to indulge and enjoy. But it doesn’t have to be a total eating catastrophe. Frito-Lay offers portion controlled sizes to make it easy to enjoy all your favorite treats – in moderation.

Here is my favorite Frito-Pie recipe:

Ingredients

  • 1 lb of Ground turkey meat
  • 1/2 cup diced onions
  • 2 tbsp mustard
  • splash of vinegar
  • A can of Ranch Style Beans
  • 1/2 cup tomato sauce
  • 1 bag of Fritos Scoops Corn Chips
  • A dash of Chili powder
  • Pepper to taste
  • 1 cup low-fat cheese (cheddar, american, you pick)

Directions

  • Brown ground turkey meat and drain.
  • Add your diced onions and continue to brown lightly.
  • Add the remaining ingredients, stir, and simmer until the Fritos have absorbed the liquid.
  • Top with additional low-fat cheese and low-fat sour cream if desired

    We make nachos with light cheese, light sour cream and turkey burgers to lessen calories.

    Brown 1lb turkey meat, drain
    Add taco seasoning
    Spread meat over nacho chips
    Sprinkle cheese
    Microwave for 10 seconds (until cheese melts)
    Add salsa and sour cream
    Serve

    We simply pour our favorite salsa over a block of low (or no) fat cream cheese and then used Baked Tostitos for dippers. Also have veggies available for dipping too. (If you prefer, you can mix the cream cheese and salsa together for a creamier consistency)

    We don’t make better-for-you recipes, as we believe that activity level is what’s most important for health. However, this dip can be altered for those liking something along those lines.

    Spread 8 oz. of cream cheese in the bottom of a pie dish.

    Top with one 15-ounce can of Hormel no-bean chili (I prefer half the amount).

    Then top with a shredded cheese blend like Mexican.

    Bake at 350 degrees until bubbling but not browned.

    Dip Tostitos into it.

    I love to make Taco Soup (Browned ground beef, can of corn, can or two of beans (black, pinto, kidney), taco seasoning, can or two of diced tomatoes in a crock pot all day or warm in soup pot). Put it over the lime tostitos. Yes, they must be lime tostitos!!! Add cheese and sour cream! Feeds a crowd and is oh, so good!!!

    I substitute 1/2 Cup of canola oil for the 1/3 Cup of shortening in my brownie recipe. It works great and is much better health-wise.

    We love chili. I substitute ground turkey (ground by hand. Try it once – you’ll never go back to store-ground turkey again. Mine looks and smells like turkey – theirs doesn’t!), and now that I’m having ear problems and need to cut down on sodium, I used dried kidney beans instead of the canned ones, and I use low sodium tomatoes. I still want salt in it, but my family is satisfied adding mozzarella cheese.

    I made a good layered salad with crushed fritos on top.

    Shred 1 head of iceberg lettuce and place in 9×13 pan. Top with diced tomatoes, cheese and any other veggies you want. Top with crushed fritos and serve with italian dressing

    our family loves seven layer bean dip with an assortment of Frito’s and Tostito’s corn chips. we also make black bean and corn salsa from scratch, and add a little Tostito’s salso to it to bump up the flavor.

    Our favorite dip is:

    1- 8oz. Pkg Softened Cream Cheese
    1- 16oz. Jar of Salsa (we use medium)
    1- 2 Cup Pkg. Shredded Fiesta Cheese

    To make it healthier we use low fat cream cheese and low fat shredded cheese.

    Blend cream cheese till smooth.
    Alternately add salsa and shredded cheese till well blended.
    Chill for one hour.
    Serve with Frito Lay Tostito Chips for dipping.

    Its not your typical dip for chips but here is a recipe to use with either Fritos The ORIGINAL or SCOOPS corn chips!

    2 cooked potatoes, diced
    2 cooked carrots, diced
    1/2 lb cooked green beans, diced or 1 cup cooked peas
    1/2 green pepper, diced
    1/2 red pepper, diced
    1/2 celery, diced
    1 tbsp chopped chives
    1/2 cup mayonnaise
    3 tbsp chili sauce
    salt and pepper
    lemon juice to taste

    Mix all the diced vegetables with chives together in a large bowl. Mix mayonnaise with chili sauce, lemon juice, salt and pepper. Pour over mixed vegetables, mix well. Serve either cold or room temperature. The kids love it and dont realize it good for them.

    I make Frito PIe. I make chili with turkey meat instead of beef. I take the small bags of Fritos and cut lengthwise. I add the chili and then top with healthy toppings like plain yogurt, onions, green peppers, olives, and low fat cheese.

    Using leftover chicken or turkey breast, make a sandwich on whole wheat bread with the meat, low-fat Swiss cheese, avacado and a light dressing of yogurt and dill. Serve with a side of Baked Lays. OK, to be honest, I put Baked Lays *in* the sandwich.

    This is a favorite appetizer!
    Cowboy Caviar

    1 can blackeye peas, rinsed
    1 can black beans, rinsed
    1 can shoe peg corn, rinsed
    2 avocados, cubed
    2/3 cup chopped green onion
    2 roma tomatoes

    Combine all together in large bowl

    Dressing

    ¼ cup olive oil
    ¼ cup red wine vinegar
    ¾ tsp salt
    pepper
    1 tsp cumin
    2-3 limes, juiced
    2/3 cup chopped cilantro

    Whisk together and pour over salad.

    Garlic and sun-dried tomato hummus

    ½ cup water
    2 tbs chopped oil-packed sun dried tomato halves
    ½ tsp salt
    ¼ tsp pepper
    2 garlic cloves
    1 15oz. Can garbanzo beans, rinsed and drained
    pita chips

    Combine all ingredients in food processor and process until smooth. Serve with pita chips for dipping.

    In the winter, I make a lot of dishes that call for cream of something soup and sour cream. I can ALWAYS sub in low-fat, low-sodium versions unnoticed because there is so much else in the dish. I do this a lot when I make Tater Tot casserole.

    I love taco dip. To make it healthier, I use soft tofu and blend it with the taco seasonings. After you top it off with olives, tomatos, lettuce, and green onions, it tastes even better than the cream cheese version because it is so whipped and airy. Perfect to use with scoops!

    For a healthy sandwich that also tastes great too, I love to fix wraps. I use the high fiber tortillas and add some lean chicken breast and then load up on veggies. Yum!

    Pie in the eye for Fritos
    1 pound lean ground beef
    2 (10.75-ounce) cans condensed cream of mushroom soup
    1 (12-ounce) can light evaporated milk
    1 cup (8 ounces) enchilada sauce
    1 packet dry onion soup mix
    1 Frito Scoops corn chips bag
    1 cup reduced fat shredded cheddar cheese

    1. Preheat oven to 325°F
    2. In a large skillet brown ground beef; drain. Add mushroom soup, evaporated milk, enchilada sauce and dry onion soup mix; stir well.
    3. Spoon half in a 13 x 9 x 2-inch baking dish followed with half of the corn chips. Repeat layers then top with cheddar cheese.
    4. Bake for 30 minutes, or until hot.

    This is one I go with all the time and is awesome

    1 can Chicken (5 oz) (or similar amount of pre-cooked skinless chicken – chopped or shredded)
    4 oz. Fat Free Cream Cheese
    8 oz. Low fat cream cheese
    1/2 cup Wishbone Just2Good Blue Cheese Dressing or Ranch Dressing
    1/2 cup Low Fat Cheddar – shredded
    4 oz. Franks RedHot (original pepper sauce *NOT* the Buffalo Wing sauce)

    1. Heat oven to 350°F.
    2. Mix together Cream cheeses. Stir in salad dressing, Franks RedHot Sauce and shredded cheese until well mixed. Stir in chicken.
    3. Bake 20 minutes or until mixture is heated through. (I like to skim off any grease that has come to the top of the dish before stirring and serving.)

    Serve with Frito Lays.

    Better for you chocolate chip cookies

    3/4 cup granulated sugar
    3/4 cup packed brown sugar
    1/2 cup butter, softened
    1/2 cup canola oil
    1 teaspoon vanilla
    1 egg
    2 cups whole wheat flour
    1 teaspoon baking soda
    1/4 teaspoon salt
    3/4 cup miniature semisweet chocolate chips
    1. Heat oven to 375°F. In large bowl, beat sugars, butter, oil, vanilla and egg with electric mixer on low speed until blended. Beat in flour, baking soda and salt until well blended. Stir in chocolate chips.
    2. On ungreased cookie sheet, drop dough by rounded measuring tablespoonfuls about 2 inches apart.
    3. Bake 7 to 9 minutes or until very light golden brown (centers will be soft). Cool 1 minute; remove from cookie sheet to cooling rack.

    1lb hamburger meat
    1- can refried beans
    1- taco seasoning
    1- Campbell’s Fiesta Cheese Soup

    Brown meat, drain. Add taco seasoning.. follow directions on envelope. Then add refried beans and fiesta cheese soup! Can also top with shredded cheese, tomatoes, lettuce if desired! So quick, easy and yummy!

    Better for you tasty fried chicken:

    Melt a small amount of butter and mix with dijon mustard. Dredge chicken in mix and then into garlic herb breadcrumbs.

    When making grilled or steamed veggies we had a hard time getting the kids to eat
    them.

    We started giving them a little spritz with spray butter and a dusting of parmesean cheese.

    Sometimes we use a spray salad dressing on the veggies and either way they like it fine.

    Instead of fattening refried beans in my 7 layer dip I use a combination of black beans, corn and salsa.
    For the sour cream layer, also use fat free
    The cheese layer- use light cheddar
    The vegs are fine as they are, and the guacamole is a healthy fat so that’s good as is.
    Naturally serve with baked tostitos / scoops

    Fast, flavorful and filled with fiber! Traditional chili takes a twist with ground chicken, white beans and green chilies. From eatbetteramerica.
    Prep Time:35 min
    Start to Finish:35 min
    makes:6 servings (1 1/3 cups each)

    1 lb ground chicken
    1 medium onion, chopped (1/2 cup)
    2 teaspoons finely chopped garlic
    3 cups Progresso® reduced-sodium chicken broth (from 32-oz carton)
    1 1/2 teaspoons dried oregano leaves
    1 teaspoon ground cumin
    1/8 to 1/4 teaspoon ground red pepper (cayenne)
    2 medium zucchini, chopped (about 3 cups)
    2 cans (15 oz each) Progresso® cannellini beans or 2 cans (15 to 16 oz each) great northern beans, drained, rinsed
    1 can (4.5 oz) chopped green chiles
    1/2 cup shredded reduced-fat Monterey Jack cheese

    1. In 4- or 5-quart saucepan or Dutch oven, cook ground chicken, onion and garlic over medium heat 5 to 7 minutes, stirring constantly, until chicken is no longer pink.

    One of my favorites! Weight Watchers chicken fried rice. Tastes really great and is only 3 points per serving!

    Ingredients:
    - 2 sprays non-fat cooking spray
    - 4 large egg whites
    - 1/2 cup scallions, chopped, green and white parts
    - 2 medium garlic cloves, minced
    - 12 oz uncooked boneless, skinless chicken breast, cut into 1/2-inch cubes
    - 1/2 cup carrots, diced
    - 2 cups cooked brown rice, regular or instant, kept hot
    - 1/2 cup frozen green peas, thawed
    - 3 tbsp low-sodium soy sauce

    Directions:
    Coat a large nonstick skillet with cooking spray and set pan over medium-high heat. Add egg whites and cook, until scrambled, stirring frequently, about 3 to 5 minutes; remove from pan and set aside.
    Offheat, recoat skillet with cooking spray and place back over medium-high heat. Add scallions and garlic; sauté 2 minutes. Add chicken and carrots; saute until chicken is golden brown and cooked through, about 5 minutes.
    Stir in reserved cooked egg whites, cooked brown rice, peas and soy sauce; cook until heated through, stirring once or twice, about 1 minute. Makes 6 servings.
