Two Healthy Dip Recipes + $100 American Express Gift Card Giveaway (Closed)

I was recently contacted and asked to create two healthy dip recipes. I’m embarrassed to say, but I absolutely love chips and dip. It’s one of my favorite reasons for going out to eat at some of my favorite Mexican food restaurants but creating a dip recipe was not something I’d ever done.  In fact, if I couldn’t buy it in a jar or someone else didn’t prepare it for me, I didn’t eat it. But since we are trying to eat healthier, I thought this would be a fun task.  And I was right.

The first dip recipe is an olive dip and it’s quite yummy.  If you’re not a fan of black olives, then you might want to try the next recipe instead.

Olive Dip

  • 1 (3 ounce) can chopped black olives
  • 1 (4 ounce) can chopped green chilies
  • 1/2 small onion, chopped
  • 1 large tomato, chopped
  • 1 tsp balsamic vinegar
  • 1tbsp extra virgin olive oil
  • salt & pepper to taste

Directions

Mix all ingredients in a medium bowl and chill in refrigerator for at least an hour. Serve with Fritos Scoops or Tostitos Scoops.

I like my dips to be pretty chunky so I really loved this dip.  You do have some fat from the olive oil and black olives, but from what I know it’s healthy fat.

The next recipe a salsa recipe because quite honestly, I love salsa.

Southwest Salsa

  • 2 cans (10 ounce)  petite diced tomatoes
  • 1 cup frozen corn
  • 1 can (15 ounce) black beans, drained and rinsed
  • 1/2 cup green bell pepper, chopped
  • 1 clove garlic, chopped
  • 1/2 jalapeno, seeded and chopped
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 cup shredded cheese (your choice, I used a Mexican blend)
  • 2 tbsp chopped fresh cilantro
  • juice of one lime

Directions

  • Mix all ingredients except cheese and cilantro in a large bowl.  Transfer into a casserole dish and then sprinkle the cheese evenly over the top.
  • Microwave uncovered on high for about 6 minutes.  Once it’s reached a warm temperature, sprinkle the cilantro over the top.  Serve with Tostitos Scoops tortilla chips or Lay’s Original potato chips.

If you don’t eat it all at one sitting, you can refrigerate and eat it cold the next day.  I really enjoyed both of these dips!  I love a dip that has bright, bold colors with big chunks full of flavor.  Both of these dips are pretty good for you and they taste great too!

    My favorite dip that’s always a must when you entertain is cheese dip made with low fat velvetta, cooked pan sasage & double(2 cans of rotel) because I like it chunky too!
