Wow, can you believe week three of the H-E-B Meal Maker Challenge is here? The contest is already half way over but I’m super excited about this weeks special ingredient — Egg Beaters! We buy Egg Beaters in bulk and we always have a stash in the freezer. {Totally love that the container is freezable!}
I thought long and hard about the type of recipe I was going to create with Egg Beaters and had almost decided on an Egg Drop Soup, but I got my hands on some Whole Wheat Flatbread and my direction totally changed. And. Oh. My. Goodness. I think I’m a genius, y’all! This recipe turned out amazing and even the kiddos were asking for seconds.
So simple, so delicious and really quite healthy! It’s low in calories and loaded with protein, but the best part is you only need a few ingredients and it doesn’t take long at all to prepare. Plus, if you don’t have flatbread, it’s totally fine to use tortillas.

Oh my goodness Crystal I LOVE it. LOVE. I had such a hard time with the Egg Beaters recipe this week, but yours looks AWESOME. Plus you can have that for breakfast, lunch, OR dinner. Very versatile.
BTW, I’m really enjoying your format with the recipe plugin. I wish there was something like that for Blogger. Just another reason for me to switch over to WP.

I love my panini press! We got ours at Lowe’s and it’s the De’Longhi brand — best purchase we’ve made for quick and easy meals! We use it at least once a week.

See now, you sold me because of the Eggbeaters. I don’t like whole eggs, but I will happily use Eggbeaters, plus I’m kinda hooked on using my panini press.
