We recently just purchased 40 pounds of skinless boneless chicken breasts. I’m not sure what the crap I was thinking when I ordered it, but since we have it, we’ve been putting it to use in most of our meals. This Creamy Chicken Penne is an easy meal to make when you’re just a little short on time.
The kids have pretty much quit asking what’s for dinner. Good thing, because we still have 35 pounds of chicken left 😉
And because I married an Italian dude, according to him, pasta is a food group of it’s own and is required with every meal. Because I’m all about quick and easy recipes, when I found a recipe on Big Oven, I decided I wanted to give it a try.
Um, so, this was absolutely delicious! Like really, really delicious! Like I want some right now just looking back at the pictures.
It’s creamy, it’s hearty, it’s got protein and it’s got veggies. But most importantly, my family gobbled it up and dinner time was a success! No bribing, no prodding and pushing, no threatening. Just a nice meal at the table with the whole family with an amazing dish.
Creamy Chicken Penne Recipe
Creamy Chicken Penne
An easy to make chicken dinner that won't disappoint.
Ingredients
- 1 lb box mini-penne pasta
- 3 boneless skinless chicken breasts; chopped into bite size pieces
- 1 Tbsp olive oil
- 1/2 red bell pepper; finely chopped
- 4 cloves garlic; minced
- 2 Tbsp butter
- 1 Tbsp flour
- 1 cup milk
- 4 ounces cream cheese
- 1/2 cup grated Parmesan
- 3 green onions; finely chopped
- Salt and pepper; to taste
Instructions
- Cook pasta according to package and drain.
- Meanwhile, heat olive oil in a large skillet. Cook chicken until done. Turn heat to low/medium and add garlic and red bell pepper and cook for two additional minutes. Remove chicken and peppers from pan.
- With heat still on low/medium, melt butter in the same skillet. Whisk in flour until smooth and gradually stir in milk. Add cream cheese and parmesan cheese and continue stirring until completely smooth.
- Turn off heat and add in chicken, pasta, and green onions. Mix, serve immediately and enjoy.

I think buying 40 pounds is awesome! I use chicken in a majority of our dinners, so it would be useful to me. I usually buy about 20 pounds per month.
