Want an easy no bake dessert for the holidays? These No Bake Peanut Butter Buckeyes are exactly what you need.

With the holidays fast approaching, it’s time to start getting recipes together for all the family and friend get-togethers that happen the next couple of months. I started a bit early to find recipes that would be easy for me to make, especially since I’ve been exhausted, most of this pregnancy.

I received a recipe created by the folks over at Hungry Jack and decided that I would try to recreate it in my kitchen (with their permission of course). Being that I had never made Buckeyes before, I had no idea how they would turn out or how easy they would be to make.  Thankfully, they were both good and easy to make.

In just about an hour, without even heating up your kitchen, these delectable treats can be in your belly.  The recipe is easy and the ingredients probably already in your pantry or refrigerator, so there really isn’t any reason not to try this recipe.

I think they turned out quite well, being my first time, and I will definitely be making these in the future.  They are quite rich, so really only one at a time will fulfill your sweet tooth, so I can see just one batch being more than enough for any function you attend.

No Bake Peanut Butter Buckeyes

No Bake Peanut Butter Buckeyes

Yield: Makes 3 dozen
Prep Time: 45 minutes
Total Time: 45 minutes

No Bake Peanut Butter Buckeyes using Hungry Jack Instant Mashed Potato Flakes.

Ingredients

  • 1/2 cup Hungry Jack Instant Mashed Potato Flakes
  • 1/4 cup water (although I needed more)
  • 1 cup Jif Creamy Peanut Butter
  • 1 tbsp butter (melted)
  • 1/4 tsp almond extract
  • 2 1/2 cups powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp Crisco All-Vegetable Shortening

Instructions

  1. Combine potato flakes and water in a large bowl. Allow to sit for about two minutes or until all potato flakes are fully hydrated.
  2. Beat in peanut butter, butter and almond extract with an electric mixer on low speed until blended. Add powered sugar, 1 cup at a time, beating until smooth. Make 36 1-inch balls using 2 teaspoonfuls of mixture for each ball.
  3. Melt chocolate chips and shortening in medium bowl. (I tried doing this in the microwave and it was a huge fail so I did it on the stove.) Dip peanut butter balls partially into the melted chocolate, keeping the top of the ball uncovered. Place on waxed paper and chill until chocolate has hardened.

    I use Hungry Jack instant potatoes for potatoes & gravy. This is the only brand I can fool my family with thinking they are getting homemade 🙂

    well I have to confess I am not very “inventive”. we keep hungry jack mix around and we make TONS and tons of Waffles. The kids here constantly ask for them! I am willing to learn new tricks and this recipe was just saved by me and planned to be made Saturday when the kids are all over here! What a fun kid “cooking” and eating recipe!
