Preparing a kid-friendly meal for your family doesn’t have to be hard and time consuming. With a family of five like mine, it may take a little beforehand planning. But by using an ingredient such as chicken, I can create a dish the whole family loves just by using different spices.
If your children are anything like mine, chicken strips and chicken nuggets are always high on the list of foods they’ll eat without pitching a fit. Every time we go out to eat, my youngest son always orders some type of chicken in bite-sized pieces. I think overall, it’s just a kid-friendly protein.
While it’s much easier to buy pre-made, packaged, frozen chicken strips, we all know it’s not ideal for every day use. In moderation, sure, but not something I want to feed my family every day. And with a easy recipe like this one for chicken strips, there is no reason why you shouldn’t be able to prepare your own at home.
Seriously, y’all, these chicken strips are absolutely AH-MAZING! The surprise of the cinnamon gives the chicken such a unique flavor and the slight heat from the peppers is just enough without being overpowering. I was a little worried how my family would respond to the not-so-traditional take on chicken strips, but they loved it. Heck, I loved it. That should be all that matters…right? {wink}
Slightly Spicy Chicken Strips Recipe
Slightly Spicy Chicken Strips
Adapted from the Carbonell Recipe for Crispy Chicken Tenders.
Ingredients
- 4 boneless, skinless chicken breasts, cut into 1/2 inch strips lengthwise
- 2 eggs, separated (only using egg white, reserve yolk in the refrigerator for future use)
- 1 tsp cayenne pepper
- 1 tsp ground mustard powder
- 1 tsp ground white pepper
- 1/4 tsp cinnamon
- salt, to taste
- 1 1/2 cup breadcrumbs
- Carbonell Extra Virgin Light Olive Oil (amount will depend on size of pan used)
- 1 lemon (optional)
