Stock up on those blueberries and make this delicious Lemon Blueberry Loaf! It’s the perfect summer recipe.

At the grocery store this week I picked up several pints of blueberries for a whopping $.99 each. Given that in my market they are usually at least $4 a pint, I definitely thought it was a steal! I also received a package from Fischer Nuts earlier this week and decided to whip up a batch of their Lemon Blueberry Loaf.

The original recipe calls for 1 tablespoon of lemon zest but didn’t specify where you should use it within the directions so I just omitted it completely.  My version without it tastes absolutely delicious, so if you don’t feel like zesting a lemon, don’t worry about it.  It’s perfectly fine without it.

The zestiness from the fresh lemon juice and the sweetness from the fresh blueberries makes this a perfect option for breakfast or an after dinner dessert. (I’ve eaten it for both, maybe even on the same day. SHHH!)

Cook Time: 1 hour 20 minutes
Total Time: 1 hour 30 minutes

The zestiness of the lemons and the sweetness from the blueberries helps get your morning off to a great start.

Ingredients

  • ½ cup Fisher Chef’s Naturals Sliced Almonds, divided
  • 2 cups all purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 stick (4 oz.) unsalted butter, room temperature
  • 1½ cups sugar, divided
  • 3 large eggs
  • 2/3 cup 1% milk
  • 1½ cups fresh blueberries (you can use frozen)
  • 3 Tbsp. freshly squeezed lemon juice

Instructions

  1. Preheat oven to 325° degrees. Line a 9" x 5" x 3" loaf pan with parchment paper then coat with non-stick cooking spray. Set aside 2 tablespoons sliced almonds. In a food processor, finely chop remaining almonds.
  2. Combine finely chopped almonds, all purpose flour, baking powder and salt in a small bowl. Set aside.
  3. Cream butter with 1¼ cups sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating well and scraping down bowl after each addition. Mix in flour mixture alternately with milk, beginning and ending with flour. Fold in blueberries being careful not to rupture any blueberries. Spoon batter into prepared loaf pan. Bake until golden brown and toothpick inserted into center comes out clean, about 1 hour 20 minutes.
  4. Meanwhile, stir together ¼ cup sugar and lemon juice. Let sit while loaf is baking; stirring occasionally.
  5. Pierce top of hot loaf several times with a toothpick. Pour sugar mixture over loaf in pan. Sprinkle with reserved sliced almonds. Cool 30 minutes in pan on cooling rack. Turn bread out of pan and cool completely.

    MMM that bread looks amazing. I’d have to make more of my clean protein crisps with a variety of berries. My topping is made with nuts so this is perfect!

    I would for SURE make the Lemon Blueberry Loaf you posted. We have a whole bunch of blueberry bushes and are still in the midst of the summer harvest. Picking berries each day now. And the husband adores anything almond… so he would appreciate this bread. He would eat it for breakfast and for a dessert.

    I make a lot of oatmeal in this house. We love nuts, cinnamon, and fruit in it. So I would use these nuts to make some.

    I have a ton of fresh basil growing in the garden. I would love to make some fresh pesto with the walnuts and pecans. Mix it up a little bit from the traditional pine nuts. With extra virgin olive oil and some parm, it would be tasty AND heart healthy.

    That looks and sounds like it would taste heavenly. We often get some good prices on blueberries at Whole Foods here on Maui. That’s when you’ll see lots of shoppers walking out with 2 or 3 baskets :))) We usually eat it from the basket but making this sounds like a winner! ~Yolanda~
