Did you know today is National Bake Cookies Day? As if we needed an excuse to bake cookies, right? In honor of this special day, I’ve got a cookie recipe to share with y’all!
For this cookie recipe, you will roll the cookie dough in toffee (yum) and raw coconut before baking. Heath bars work perfectly for the toffee. The toffee and chocolate together…divine, y’all. I promise.
Rolled Toffee and Coconut Cookies
A delicious, chewy cookie recipe featuring toffee and coconut.
Ingredients
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 cup brown sugar
- ½ cup white sugar
- ¾ cup butter, room temperature
- 2 large eggs , room temperature
- 1 tablespoon vanilla
- ¾ cup toffee and chocolate (Heath bars work well)
- ¾ cup raw large flake coconut, unsweetened
Note:
- For rolling, you'll want to use a food processor to combine them together into a fine, almost powder-like texture.
Instructions
The waiting for them to cool is the hardest part. Especially when you have little fingers around that like to sneak up, grab and run.
I like a soft, chewy cookie much better than a hard, crispy cookie. To get the chewy center, just slightly under cook these cookies. They might seem too soft at first but they will cool to perfection.

Coconut and toffee – a couple of my favorite flavors! Lately I’ve been making a lot of chocolate based cookies. I really need to be more diligent in ‘under cooking’ my cookies, I like them softer too but I’m always worried they won’t set up after the oven and will be a gooey mess.
