Breakfast really isn’t my thing, y’all. I mean, I eat breakfast, but it usually isn’t a nice, sit down, relax with a cup of coffee kind of breakfast. During the week our mornings are hectic and we usually go for something simple, but that offers some sort of nutritional value. Some mornings you’ll find me munching on a hard-boiled egg and a piece of fruit, or some mornings I opt for a bowl of oatmeal with cranberries and brown sugar sprinkled on top.
But on the weekends, when things normally slow down just a little, we usually enjoy a hot breakfast where we all actually sit down at the table.

Making Breakfast Boats with the Kids
Getting the kids into the kitchen with me is something I’ve really been working on this past year. For a while there I kept them out of the kitchen because it was just easier for me to do it myself (and less messy). And then one day the realization hit me that if I didn’t teach them, who would? Since then I’ve made an effort to invite them in to be a part of meal preparation. Hopefully their future spouses will thank me!
From whisking the ingredients together to slicing the green onions, the kids have a place in prepping these breakfast boats.
My youngest is seven and he loves whisking. It’s not always the cleanest of tasks for him, but he loves it. My older two are nine and 12 so slicing the green onions and bread were appropriate tasks for them. It’s funny because the more I let the kids in the kitchen to help, the more they want to help. Recently I’ve been noticing a trend where they’re arguing about what tasks they want to do because they ALL want to help do the same tasks.
Maybe soon they’ll be doing all the cooking – one can only dream, right?
These Sausage & Egg Breakfast Boats are so easy to make and taste pretty darn amazing. What’s really great about this recipe is you can change it up to your tastes. Add in some sliced grape tomatoes, or some julienned spinach (thin long strips) and bell pepper. It’s easy to make these your own by adding in ingredients that you love and have on hand.

- 6 hoagie rolls
- 8 eggs
- 1/2 cup shredded cheese, variety of your choice
- 2 green onions, sliced thin
- salt & pepper, to taste
