At the beginning of the new year one of my goals was to start cooking healthier for my family. It’s been a bumpy ride but I think we are the right path. As part of a campaign with Mom Central, I was recently sent a box of Splenda No Calorie Granulated Sweetener and a specialized Splenda Tastebook that included 40 classic recipes. After drooling over many of the recipes, I decided that I would bake the Choco-Chip Cookies. It’s a favorite among the group and we should definitely be able to tell if it taste different by using Splenda rather than sugar.
After dinner everyone tried a choco-chip cookie and they were delicious! They were light, fluffy, moist and oh so good. I’m not sure why my cookies were so fluffy because I followed the recipe but even though they look a little weird, they were delicious. My 6-year old daughter told me they were my best cookies yet. I didn’t have a full cup of chocolate chips, so I only put in about a half a cup and the family didn’t notice.

Those do look fluffy. That compliment from your daughter is the best anyone can get. 🙂
