Want cookies but don’t have a lot of time? If you have a box of cake mix in the pantry you can whip up a batch of these Cake Mix Cookie Sandwiches in no time.
We all know that I’m not a baker. But, lately something weird is happening to me. I’m getting all June Cleaver-ish and actually wanting to bake and do crafty things around the house. {Y’all — it’s craziness I tell you!}
But anyway, my latest little experiment was cookies made with boxed cake mix. And by golly, it was a success. Are you as surprised as I am?
These turned out super yummy and were incredibly easy to make. Because I used a box of cake mix, the ingredients are minimal and usually products you have in your refrigerator and pantry.
Note: the batter is really sticky, so you’ll want to take precautions with Pam or flour so the batter doesn’t stick to your hands and fingers. Don’t forget to take off your jewelry too!
You could recruit some help from your husband {like I did} or even let your children help out!
If you don’t feel comfortable with the children helping with making cookie balls, let them help out with the sprinkles. It’s an easy task and I’m sure they’ll have a blast.
Don’t they look so pretty and yummy? Just wait until you add the chocolate to the middle and sandwich two of them together.
Just a circle around the edges of the cookie will suffice because once you put them together and squeeze down, the frosting will spread out.
These were a huge hit with the entire family. This recipe made 24 cookies which resulted in 12 cookie sandwiches and I think there are only a couple left — if the kiddos don’t sneak any.

Cake Mix Cookie Sandwiches Recipe
Ingredients
- 1 box of yellow cake mix
- 1 egg
- 1/4 cup buttermilk
- 1/4 cup canola oil
- 1 can Pillsbury Easy Frost Frosting
- sprinkles
Instructions
- Preheat oven to 350° and line cookie sheet with parchment paper.
- Combine the cake mix, egg, buttermilk and oil in a large bowl.
- Beat with a mixer on medium until ingredients are combined and smooth.
- Shape 1-inch mounds of batter into balls. You’ll need to spray your hands with a little Pam so that the batter does not stick. This is the hardest part and is pretty messy. Place on parchment lined cookie sheet about 2 inches apart.
- Slightly flatten with your fingers and top with sprinkles.
- Bake 8 to 10 minutes, or until cookies are golden. Cool on a wire rack.
- Make a circle of frosting around the bottom of one cookie and sandwich the cookies together with the frosting.
- Enjoy the cookies with a big glass of cold milk.
