I love going to a Chinese restaurant and enjoying pot stickers. But I don’t like how unhealthy they can be. So I decided to make a vegetable version. If you love pot stickers, you’ll love these Easy Vegetable Pot Stickers.
During the past few weeks, I’ve been a mean cooking machine. From the amazing cake mix cookies to the incredibly popular Chicken Fajita Tacos, I’ve been experimenting in the kitchen and then sharing with all of you.
If you have little people that don’t really like vegetables, this is a great way to sneak those in during lunch or dinner.
Easy Vegetable Pot Stickers

- 3 tbsp reduced-sodium soy sauce, divided
- 2 tbsp rice-wine vinegar
- 3 tbsp grated carrots
- 3 tbsp corn kernels
- 1/2 cup frozen chopped spinach, thawed with excess water squeezed out
- 16 wonton wrappers
- 1 tbsp sugar
- 1/2 tsp grated ginger
1. In a small bowl, whisk the vinegar, 2 tbsp soy sauce, sugar and ginger together and set aside. This is your dipping sauce.
2. Use a section of wax paper and put wonton wrappers on the wax paper. Place a small about of spinach, corn and carrots in the middle of each wonton wrapper. Drizzle a small amount of the remaining soy sauce on top of the veggies on each wonton.
3. Fill a large pot with water and bring to a boil while you are finishing the wontons. Get another small bowl of water and fill with water. Dip your finger into the water and apply the water to the sides of the wonton wrapper. Fold the wonton wrapper over and pinch the edges together and make sure you have sealed the sides.
4. Once you have all your wonton wrappers filled and sealed, boil for 3 minutes. Use a slotted spoon to remove pot stickers from water and drain. Cool on platter and serve with dipping sauce.
I used two separate sheets of wax paper and did everything in two batches. While I was sealing up the first batch, my husband was putting vegetables on the second batch.
You could have your children help with placing the vegetables on the wonton wrapper. I know when my children help make a meal, they seem to eat better.
I folded mine into triangles, but as long as the ends are sealed, you can fold them however your want.
I learned that you need to gently place each wonton into the boiling water because if not, they all bunch together and it makes taking them out really difficult. On my second batch, I placed each one in separately right around the edge of the pot and they didn’t stick together. Another reason why you probably want to work in two batches.
These were a huge hit with the whole family! It’s low calories and each pot sticker contains yummy nutrients from the variety of vegetables. I’ll definitely be making these again and I’m already thinking of different fillers…especially a dessert variety (shhh, it includes strawberries)!

Thank you for this recipe! We love pot stickers and I have been wanting to try to make my own. We usually just buy the frozen ones that are pretty tasty but I love to be able to make my own using fresh ingredients and try different flavors. These look delish and I can’t wait to try them. Your pot stickers look very good, I think I am going to try the vegetable version next time I make some, Pot stickers are alot easier to make than people think, actually I just made some 2 nights ago except I make mine using ground pork, shredded cabbage & carrots, to save time I use a bag cole slaw ( easier than shredding my own cabbage & carrots) few dashes of soy sauce and grated ginger depending on your taste you can use fresh or powdered ginger in the can I just sprinkle about 1/2 teaspoon onto the meat while its browning, let the cabbage/carrots cook down with the meat and when the meat is cooked completely drain off all the liquid (that will include the grease and any other liquid accumulated from cooking) let the mix cool (otherwise it will melt holes in the won ton wrappers) add about teaspoon or little more of the mix on to your won tons wrapper I usually do a little assembly line of 4-5 at a time, fold into triangle and seal the edges, when I have them all filled I fry them in a skillet with couple tablespoons of oil just until the bottoms are browned, dont move them around in the pan, just let them cook on med heat then I steam them I use about 1/2 cup of water poured over the pot stickers, cover and let cook about 3-5 minutes more then eat and enjoy with your favorite dipping sauce, since the inside is already cooked it doesn’t take too long, and they are delicious.

and I also use the same pork filling to make home made egg rolls using the larger egg roll wrappers and fry them in deep fryer until browned ( about 3-5 minutes) And they are so good-much better than you get at a Chinese restaurant
