Snowman Surprise Cupcake

While I was at the Kraft BlogEats Conference, we were divided up in teams and asked to come up with an original recipe using Jell-O pudding, Planters Peanut Butter and Oreos. We only had an hour to brainstorm and prepare our recipe and somehow, the team that I was on won! We were super excited and well, just a little shocked. All the other teams did such an amazing job and we were quite honored.

snowman surprise cupcakeThis really isn’t an easy recipe (to me) and it does take some time and patience.  It could be done a ton quicker if you used a boxed cake mix rather than making your own like we did.

Snowman Surprise Cupcake

Snowman Surprise Cupcake

Yield: 12

Yummy cupcakes with an incredible surprise inside.

Ingredients

  • 2 ¼ cups flour
  • 1 ½ cups sugar
  • 2 tsp baking powder
  • 2 tsp vanilla
  • 4 large eggs
  • 2 ¼ cups milk
  • cup heavy cream
  • cup butter
  • 1 3.9 oz. Jell-O chocolate pudding
  • 8 oz. cream cheese, softened
  • 32 Oreos, crushed
  • cup peanut butter
  • 6 squares white chocolate baking squares
  • Red and blue decorating gel
  • 12 Hershey Kisses
  • 1 3.9 oz. Jell-O vanilla pudding
  • 2 tbsp chocolate frosting

Instructions

  • Preheat oven to 350 degrees.
  • Beat sugar, butter, baking powder and vanilla in large bowl with mixer on high for 3 minutes or until fluffy.
  • Add eggs one at a time, beating well after each.
  • On low, beat in flour alternately with milk, just until blended.
  • Add dry chocolate pudding mix and mix well.
  • In a separate bowl, mix cream cheese, Oreos and peanut butter. Roll into balls and place on wax paper. (These will be your cookie balls.)
  • Line muffin tin with cupcake liner. Fill with cake batter, ¼ full. Place cookie ball in center of each. Top with cake batter to ¾ full.
  • Bake at 350° for 25 minutes or until inserted toothpick comes out clean. Let cool.
  • While cupcakes are cooling, mix vanilla pudding, 1 cup milk, 2 tbsp chocolate frosting.
  • Once the cupcakes are cool, top cupcakes.
  • To make the snowmen, melt 6 squares white baking chocolate. Dip cookie balls. Top with kisses. Let harden in refrigerator. Paint faces with gel. Place on top of cupcakes.
  • Enjoy!

    I’m still in shock that our pitiful looking little cupcakes won. I must admit though, they tasted pretty darn good.

      What a great picture! He looks delicious and I can’t wait to recreate this recipe at home! I loved that we made the cake mix from scratch in such a short amount of time, but also like your tip of using boxed mix in a time crunch. Either way it’s bound to be delicious!

      What a terrific idea and they are so cute.
      What a great treat to bring to a Christmas party or to send to school with the kids.
      How about a December birthday – like mine… Not that I’m hinting to anyone. =)
      I think you did a fantastic job and surely deserved to win.
      So glad you got to go to such a fabulous event.
