In case you didn’t already know, I’m all about easy to make meals. Being a mommy to three young children, working part-time, plus having the blog which requires full-time hours, some nights I just don’t have the time or energy to create the family a nice, elaborate meal.
Those are the nights I love that I have some Velveeta and Rotel in the pantry.
A couple of nights ago, I decided to try the Easy Santa Fe Skillet that I found on the Kraft website. I changed things up just a bit (substituted ground turkey for the ground beef and VELVEETA 2% Milk for the VELVEETA) and it was a huge hit with the entire family and super simple for me to make.
Our dinner time routine usually consists of me (or the hubby on occasion) preparing dinner while the children set the table. We all sit down as a family at the table and eat together. We usually talk about what happened during the day and it allows us to de-technologize (I just made up a word) for a little bit. I look forward to that time with the family each night and I think they do too.
Easy Santa Fe Skillet Recipe
Easy Santa Fe Skillet
Ingredients
- 1 lb. ground turkey
- ½ cup chopped onions
- 2 cups water
- 1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
- 1 tsp ground cumin
- 3 cups garden rotini pasta, uncooked
- ½ cup chopped green peppers
- ½ lb (8 oz.) VELVEETA® 2% Milk, cut into ½-inch cubes
Instructions
- Brown meat with onions in large skillet; drain. Return to skillet.
- Add water, tomatoes and cumin; mix well. Bring to boil. Stir in pasta and peppers; cover. Simmer on medium-low heat 15 min. or until pasta is tender and almost all the water is absorbed, stirring occasionally.
- Add Velveeta; cook 3 to 5 min. or until melted, stirring frequently.
