An easy Spanish Rice and Beef Burritos recipe that you can whip up in 30 minutes!
I don’t know what it is about the summer, but it makes me lazy. My schedule gets out of whack and I just want to spend the days hanging out with my children and not doing much of anything else.
But we still need to eat, the clothes need to be washed, the floors mopped — so I don’t exactly have time to be lazy.
I’ve found that over the years as the children have grown older and their activities have increased, I don’t have the time I used to have. Between school, sports, and other extracurricular activities, my days are filled with car rides from destination A to destination B, then back to destination A, and so forth…
When my schedule gets crazy and I don’t know how I’ll make it through, I jump in survival mode and do what I can, when I can. If the clothes pile up, so be it. If the dishes are overflowing in the sink, it’s okay. If I get some help from the grocery store in prepping dinner, I’ll take it.
I’m all about easy recipes and I’ll take help wherever I can get it. Especially at dinner time. I have absolutely no shame in semi-homemade meals.
So instead of making a Homemade Spanish Rice for these Spanish Rice and Beef Burritos, I took some help from the grocery store and used a Knorr Spanish Rice packet for a quick one pot meal!
The original recipe only called for 8 ounces of lean ground beef, but I just went ahead and used the whole pound. I’m glad I did because there was a nice balance of rice and beef. I imagine that if I would have only used the 8 ounces that the rice/beef ratio would have been out of balance.
Talk about a super simple dinner with super simple cleanup — that’s my kind of meal!
Spanish Rice and Beef Burritos
Spanish Rice and Beef Burritos
Need a quick dinner on the table in under 30 minutes. Try this Spanish Rice and Beef Burritos recipe for a quick and easy meal.
Ingredients
- 16 ounces lean ground beef
- 2 cups water
- 1 package Knorr Fiesta Sides - Spanish Rice
- 1 cup Mexican cheese blend
- 6 (10 in.) burrito size flour tortillas, warmed
Optional ingredients
- Black Beans
- Guacamole
- Pico de Gallo
- Cilantro
Instructions
- In a large nonstick skillet, brown ground beef over medium-high heat. If needed, drain grease from meat after browning. Stir in water and Knorr Fiests Sides - Spanish Rice; bring to a boil over high heat. Reduce heat to medium-low and cook covered for 7 minutes or until rice is tender and liquid is absorbed.
- Remove from heat. Stir in cheese and let stand for 2 minutes.
- Spoon 3/4 cup rice mixture onto each warmed tortilla; roll-up.
Variations
- You could also add a can of strained, rinsed black beans to the same pot. It would help the meal go further and add a little fiber. Before rolling you could also add in guacamole, pico de gallo, and/or cilantro for some added flavor.

Did I already mention that this is a ONE POT MEAL? Meaning that you only have to wash one pot afterwards! Um, that’s huge here. The less cleanup I have to do after dinner, the better!

We fixed this and it was delicious. We added chopped onions to the ground beef as it was browning. Other than that, we followed the recipe as presented. The Knorr Spanish rice gave it a slightly sweet taste. This recipe is a keeper and We will probably experiment with it by adding the suggested optional ingredients and an extra spice or two.
