When I was pregnant with my third child, I read something somewhere that made a claim that if while you were pregnant and you were vegetarian, it was better for your child in utero and that your children would be smarter. Being the over-emotional mess that I was when I was pregnant, I made the declaration to my husband that I was going to be a vegetarian. Thankfully, he happily obliged and while I was pregnant, we experimented and learned so much about the vegetarian lifestyle.
Some things I absolutely loved while he hated (tofu) but we made it work. My non-green eating husband began eating things he would had never tried before and we got healthier without even really trying.
One of my favorite things that we learned to make and I still make today is Kale Chips. My husband doesn’t like them as much as I do, but the kids gobble them up before I even have a chance to enjoy a few myself. It’s a similar situation with the Baked Garbanzo Beans! Both options are healthy, nutritious snacks.
Kale Chips
Ingredients
- 1 bunch kale, washed and thoroughly dried
- 1 tbsp olive oil
- sea salt, for sprinkling
Instructions
Oh. My. Yummy. Crispiness. While you won’t get the hard crunch of a regular potato chip, you do get a light, airy crunch that is quite satisfying.
This recipe can easily be changed to add a little spice, a little tang or whatever you’re feeling that day. Just make sure you watch it closely while it’s in the oven. It can go from done to burnt in a matter of seconds. (Not that I know from experience or anything.)

I find it so odd that I cannot stand any type of poultry, meat, or fish right now.. I’m definitely more into fruits and vegetables. I’ve been getting protein through whey, milk, and cheese right now. I have yet to try Kale Chips. Probably much better than my cravings of Salt and Vinegar Kettle Chips..

I’ve been a vegetarian for so many years and I’ve never eaten Kale. I know I need to and several times I’ve purchased it, only to find it in the bottom of the refrigerator all mushy. I think I’m the only vegetarian that doesn’t like vegetables! I swear, I’m going to make these…soon!
