Ever have those days where you want something tasty and satisfying but you don’t want to spend hours in the kitchen? Me too. Quite often actually. When I’m feeling like that, you can be pretty certain that I’ll be making something easy like this Tex-Mex Chili Mac.
As I was browsing through the Skinner Pasta website, I decided to make one of the recipes listed on their site. With just a few little tweaks I made it so that it would meet my family’s tastes. The end result was a delightfully tasteful Tex-Mex Chili Mac that the WHOLE family loved! To me, that’s success.
Usually chili is much more soupier but obviously not what we were going for here. It was supposed to be more like a macaroni and cheese type dish, infused with a chili-like flavor. I think that was accomplished and it was delicious.
Tex-Mex Chili Mac Recipe
Tex-Mex Chili Mac
Adapted from an original recipe from Skinner Pasta.
Ingredients
- 12 ounces Skinner Large Elbow Pasta, uncooked
- 2 pounds ground turkey
- 1 small onion, chopped (I used frozen diced onions)
- 1 green bell pepper, diced
- 1 1/2 teaspoons ground cumin
- 1 1/2 tablespoons chili powder
- 1 teaspoon salt
- 1 can (28 ounces) diced tomatoes with green chilies, undrained
- 1/2 cup cheddar cheese, shredded
- 1/2 cup sour cream
- fresh cilantro leaves, to taste

Original recipe called for poblano pepper but I substituted the green bell pepper. The original recipe also called for crushed tortilla chips, but instead of using the chips, I just added 1 teaspoon of salt.
