If you’re struggling to find something sweet to enjoy following the Ketogenic lifestyle, try these Keto Almond Butter Cups.
This is a partnered post with Brandless. As always, all thoughts and opinions are my own.
With over two months of the Ketogenic lifestyle under my belt, I can definitely say that I miss my sweets. I didn’t think I had much of a sweet tooth before, but not being able to have any sugar has made me wish I could devour ALL THE SUGAR!
I’m pretty confident it’s just my body adjusting and changing to this new way of eating, but oh my gosh, give me the sweets, y’all.
Tip: I know it’s not chocolate, but the Almond Butter I buy from Brandless is a tasty treat when my cravings strike. I love the squeeze pouch because I can forget all my manners and squeeze some on my finger and enjoy without dirtying a dish.
Keto Desserts
In an effort to try to curb this sweet tooth of mine, I’ve gone on a journey to find some Keto recipes that won’t kick me out of ketosis the moment it hits my tongue. I’ve been able to find plenty of recipes on Pinterest and Google, but honestly, a lot of them just suck.
I’ve tried several of those “fat bomb” recipes as well as some “butter cup” recipes only to find them super oily and inedible. I can’t even tell you how much money I’ve wasted with Keto treats that tasted like garbage. They’re either overloaded with coconut oil or so dry you need a gallon of water to help wash them down.
But these Keto Almond Butter Cups are so good that they don’t even taste like a Keto dessert.
Almond Butter Cups
With restrictions on the Keto diet, it’s really easy to get discouraged about what you can eat and what you can’t eat (which is a lot). Finding substitutions to your favorite things isn’t always easy, but it’s mostly possible with a little research and experimentation.
My husband is doing Keto with me and his favorite dessert is peanut butter cups. My goal in perfecting these Almond Butter Cups was finding him a way to enjoy his favorite dessert in his new lifestyle.
And it worked, y’all!
These Keto Almond Butter Cups are pretty much amazing. And with only 3.1 net carbs per serving, you can enjoy one or two and still remain in Ketosis!
If you’re expecting a milk chocolate experience, then these aren’t for you unfortunately. But if you like dark chocolate and desserts that aren’t overly sweet, oh my gosh, you’re going to love these.
How to Make Keto Almond Butter Cups
Scroll down to the bottom of this page for a printable recipe card.
To make these delicious Keto Almond Butter Cups, start by melting the chocolate chips according to the directions stated on the package. If you decide to melt the chocolates in the microwave rather than using a double boiler as stated on the package, be very careful not to burn the chocolate. Melt in very short increments in the microwave stirring well between each interval. To thin out the chocolate to make it easier to work with, add in the coconut oil and stir until combined.
Then, using a spoon, carefully pour a thin layer of chocolate into a mini silicone cupcake liner. Repeat for each silicone mold, placing each one on a baking sheet after filling. Place the baking sheet into the refrigerator for about 5 minutes to allow the chocolate to harden.
Next, remove the baking sheet from the refrigerator and carefully squeeze Brandless Almond Butter onto the tops of each chocolate layer. I used about 1/2 teaspoon of almond butter for each one. You’ll just need to eye it. You want a thin layer of almond butter in the center of each one.
Return the baking sheet to the refrigerator for an additional 5 minutes. Remove the baking sheet from the refrigerator and then carefully spoon remaining chocolate over the almond butter in each mold.
Return the baking sheet to the refrigerator for an additional 5 minutes. Serve immediately or keep in the refrigerator until serving.
Affordable Keto Ingredients
Part of following the Ketogenic lifestyle is totally adopting a new way of life. Once you make the change, nothing is the same. The way you grocery shop changes. They way you eat out changes. The way you cook changes. Everything changes.
Even the grocery budget changes, y’all. Following the Keto diet isn’t cheap. With the high cost of healthier foods, it’s no wonder we grab the cheaper options and pack on the pounds. But regardless of which “diet” you choose, your monthly food budget will likely need to be raised to accommodate healthier options.
But with a little research and dedication, you can find quality, affordable Keto ingredients right at your finger tips.
Recently I’ve been using Brandless to purchase some of my Keto ingredients. Now that the holidays are over, the bills are pouring in, and I’m sure we’re all trying to figure out a way to eat better on a budget. Brandless makes it easy to get better prices and better ingredients by eliminating the “BrandTax,” which is the hidden costs consumers pay for national brands.

Notes
I hate using the double boiler method to melt chocolate and almost always use the microwave. Lily's chocolate melts differently than traditional sugar filled morsels. If you decide to melt chocolates in the microwave rather than using the double boiler, be very careful not to burn the chocolate. Melt in very short increments in the microwave stirring well between each interval. It's very easy to burn, just sayin'.
Because Keto ingredients are so expensive, you'll use every last bit of chocolate for this recipe. 1/2 cup of chocolate morsels is the exact amount you'll need for 6 equal sized servings. That means no tasting or you may not have enough to complete the recipe.
