Football season is upon us and everyone knows that game day just isn’t complete without the ultimate tailgating party! Whether it’s with a group of friends huddled outside the stadium or the family gathered around the TV in the den, tasty food and snacks are essential to a “winning” tailgating experience.
Tailgating for most of us conjures images of greasy pizza and saucy wings. With a little vision and planning, you can score big by offering a menu that’s just as delicious but a bit better for you.
Fewer penalties, better tailgating…
When I think about tailgating parties, I think of high calorie, fat drenched comfort foods but it doesn’t have to be that way. You can substitute some better for you ingredients such as using a lean protein, using fat-free or low-fat ingredients and offering healthier alternatives such as guacamole and nuts can trim hundreds of calories off your meals! We know few people go to tailgate parties for the veggies – it’s definitely a time to indulge and enjoy. But it doesn’t have to be a total eating catastrophe. Frito-Lay offers portion controlled sizes to make it easy to enjoy all your favorite treats – in moderation.
Here is my favorite Frito-Pie recipe:
Ingredients
- 1 lb of Ground turkey meat
- 1/2 cup diced onions
- 2 tbsp mustard
- splash of vinegar
- A can of Ranch Style Beans
- 1/2 cup tomato sauce
- 1 bag of Fritos Scoops Corn Chips
- A dash of Chili powder
- Pepper to taste
- 1 cup low-fat cheese (cheddar, american, you pick)
Directions
- Brown ground turkey meat and drain.
- Add your diced onions and continue to brown lightly.
- Add the remaining ingredients, stir, and simmer until the Fritos have absorbed the liquid.
- Top with additional low-fat cheese and low-fat sour cream if desired

What’s football without desert? These are great low calorie brownies!
Ingredients
Dry Ingredients:
3/4 cup whole wheat flour
1/2 tsp baking powder
1/4 tsp salt
Wet Ingredients:
1/2 cup unsweetened applesauce
1/2 cup baking cocoa
1/2 cup honey
1 tsp vanilla
1 egg
Directions
1. Stir together dry ingredients.
2. In a seperate bowl, stir togetehr applesauce & cocoa.
3. Next, add in honey, vanilla and egg. Beat well.
4. Combine both sets of ingredients.
5. Spray sheet with pam. Pour into a dish about 1inch thick.
6. Bake 350 degrees for abotu 20 minutes
7. Remove form heat and cut into 10 squares
8. ENJOY 100 CAL GOODNESS!
And oven baked chicken is my favorite!
Ingredients
* 1/2 cup(s) milk, lowfat (1%), or buttermilk
* 1 teaspoon poultry seasoning
* 1 cup(s) cereal, Cornflakes, crumbled
* 1 1/2 tablespoon onion powder
* 1 1/2 tablespoon garlic powder
* 2 teaspoon pepper, black
* 2 teaspoon pepper, red, crushed
* 1 teaspoon ginger, ground
* 4 chicken, drumsticks, skinless
* 4 chicken, breast, skinless
* 1 dash(es) paprika
* 1 teaspoon oil, vegetable
Preparation
1. Preheat oven to 350 degrees F.
2. Add half teaspoon of poultry seasoning to milk.
3. Combine all other spices with cornflake crumbs and place in plastic bag.
4. Wash chicken and pat dry. Dip chicken into milk, shake to remove excess, then quickly shake in bag with seasoning and crumbs.
5. Refrigerate for one hour.
6. Remove from refrigerator and sprinkle lightly with paprika for color.
7. Evenly space chicken on greased baking pan.
8. Cover with aluminum foil and bake for 40 minutes. Remove foil and continue baking for an added 30 to 40 minutes or until meat can be easily pulled away from bone with fork. Drumsticks may require less baking time than breasts. (Do not turn chicken during baking.) Crumbs will form crispy “skin.”
Deviled Eggs
12 large hard-boiled eggs, (see Tip), peeled
1/3 cup nonfat cottage cheese
1/4 cup low-fat mayonnaise
3 tablespoon minced fresh chives, or scallion greens
1 tablespoon sweet pickle relish
2 teaspoons yellow mustard
1/8 teaspoon salt
Paprika, for garnish
Step 1
Halve eggs lengthwise with a sharp knife. Gently remove the yolks. Place 16 yolk halves in a food processor (discard the remaining 8 yolk halves). Add cottage cheese, mayonnaise, chives (or scallion greens), relish, mustard and salt; process until smooth.
Step 2
Spoon about 2 teaspoons yolk mixture into each egg white half. Sprinkle with paprika, if desired.

GRAPE SALAD
2 lbs. red grapes, washed and dried
2 lbs. green grapes, washed and dried
Sauce
1 cup sour cream
1 (8-oz.) block of cream cheese, softened
1 tsp. vanilla
1/2 cup of sugar
Mix all of the sauce ingredients until creamy. Stir in grapes. Chill. Sprinkle with brown sugar just before serving, if desired.

Healthy recipe: Thai Chicken Wraps
Ingredients:
1 head of iceberg lettuce
3 boneless chicken breasts – chopped up
2 Tbsp vegetable oil
3 gloves of garlic or 1 1/2 tsp minced garlic
2 Tbsp oyster sauce
4 Tbsp lime juice
4 Tbsp soy sauce
1 cup Broccoli Slaw
1 bell pepper sliced thin
Take the head of lettuce and remove the stem part. Pull the lettuce apart into leaves. Rinse with water and pat dry.
Heat a large skillet over high heat. Add the vegetable oil and then the chicken. Cook for about 3 minutes stirring constantly. Then add in all the other ingredients and cook for about 2 minutes while stirring. Pour into a bowl.
To assemble the wraps, take a lettuce leaf and place 1 to 2 tablespoons of filling in the center and wrap it up.

My favorite healthy recipe is very simple yet fat free and low cal.
Mix together:
1 can whole kernel corn drained
1 can black bean drained and rinsed
1 jar salsa
Serve with frito scoops. YUMOLA!!

I mix together equal parts sour cream and
cream cheese in a large casserole dish. Then I layer the following toppings:
Diced onions, diced melrose peppers, diced tomatoes, monteray jack cheese, cheddar cheese, sliced black olives and diced green onions.
Serve with Frito Lay Chips for a taste everyone will enjoy
Walking Tacos
Take individual bags of Frito Lay fritos. Add low fat ground beef taco meat, cheese, lettuce, and tomatoes. Enjoy.
