I’m kind of a sucker for easy, semi-homemade meals. Being a busy mom of three, I don’t always have enough time to create an elaborate breakfast at 6:30 in the morning. Heck, at that time I’m barely even keeping my eyes open.

That’s why these Sausage, Cheese & Potato Breakfast Wraps are kind of popular around here – for both me and the kids.

I’ve used Simply Potatoes in other recipes (like this one: Egg, Potato & Bacon Breakfast Muffins) I’ve shared because I think they are so easy to use and all the work is already done for me!

I’ve learned throughout the years to take all the help I can. By having the potatoes already wash, peeled and diced, I save so much time.

These Sausage, Cheese & Potato Breakfast Wraps are so simple to make that you really don’t even need a recipe, but I figured I’d share it anyway. Because what’s a recipe post without a recipe, right?

Sausage, Cheese & Potato Breakfast Wraps = a delicious and easy breakfast recipe.

Serves: 5 wraps
Ingredients
  • 1 – 20oz bag Simply Potatoes Steakhouse Seasoned Diced Potatoes
  • ¼ cup vegetable oil
  • 5 flour tortillas
  • 1 cup crumbled, cooked pork sausage
  • 1 cup triple cheddar shredded cheese
Instructions
  1. Heat a large skillet over medium heat with oil. Once oil is hot, add potatoes, stir and cover.
  2. Stir potatoes every 3 minutes for 15-20 minutes, until fully cooked and tender.
  3. Warm tortillas in the microwave for 30 seconds.
  4. Build your wrap with a layer of potatoes, sausage and a sprinkling of cheese. Fold the tortilla and serve warm.

What did I tell ya? So. Super. Simple!
